How Sunflower Lecithin actually works

A phospholipid complex — mostly phosphatidylcholine, with phosphatidylinositol and phosphatidylethanolamine. Phosphatidylcholine is a structural membrane component and the form choline is used in to assemble VLDL particles, which is how the liver exports fat. It is also an emulsifier, which is why it appears in food manufacturing.

How to read these tiers
