How Manuka Honey actually works

The antibacterial activity comes from methylglyoxal, formed non-enzymatically from dihydroxyacetone in manuka nectar — this is a chemically defined active, which is why it can be graded by MGO content. Unlike ordinary honey's hydrogen-peroxide-based activity, MGO is not destroyed by catalase in wound tissue, which is why it works where other honey does not.
