How Apple Cider Vinegar actually works

The active ingredient is acetic acid, and the mechanism is mostly mechanical. It slows gastric emptying, so a meal's carbohydrate arrives at the intestine more gradually and the post-meal glucose peak is blunted. It also inhibits disaccharidase enzymes in the intestinal brush border, slowing the breakdown of starch and table sugar into absorbable glucose. Both effects require it to be present with the carbohydrate — which is why timing determines whether it does anything at all.

The weight-loss claims rest on small studies with effects too small to matter, and the detox and pH claims are nonsense — you cannot meaningfully alter blood pH with food, and it's a good thing you can't. Gummies have generally lost most of the acetic acid that does the work.
